*Be careful with any vacuum sealed plastic wrapping such as those used with cheese, meats, etc..as companies may dust the plastic with cornstarch to prevent sticking. Companies may also dust frozen foods with cornstarch, so call manufacturer to verify as safe.

BAKING SUBSTITUTIONS:

baking powder, you can make you own with the recipe below or buy Featherweight brand (small glass jar with a white lid and blue label). Available at HFS's and most with-it regular chain grocer's.

vinegar, always use apple cider and some balsamics are safe too.

starch, there is tapioca and potato that you can use in place of recipes that call for corn starch. Flour can even be used.

vanilla extract, this is a tough one. most will say (manufacturers and the like) that this does not really contain corn because a corn (most likely) alcohol was used to ferment and the alcohol should be free of all protein, but many avoid it just the same. Either sub a little safe milk, water or if it is the flavor you want you can actually grind vanilla bean in a coffee grinder. Be sure to add liquid though.

juice, always use fresh juice. e.g. if something calls for OJ buy an orange and juice it instead. same with lemon or lime juice when baking and cooking.

margarine, lard is corn, dairy and soy free.

powdered sugar, there is a brand available that is corn free from Miss Roben at
http://www.allergygrocer.com. You can also grind granulated cane sugar in a coffee grinder. Tip: grind for longer than you think you need to make sure all the grit is ground.

Corn-Free Baking Powder (from missroben.com)
1/3 cup baking soda
2/3 cup cream of tartar
2/3 arrowroot starch/powder

Thoroughly blend all ingredients together. Store in airtight container. Makes 1 2/3 cups of corn-free baking powder. Use as needed to replace required standard baking powder in recipes.
