can anybody please help me?
okay, the thing is i've been diagnosed with several food intolerances! I cant have dairy, eggs, wheat, citus fruits, peanuts, soya, red berries, mushrooms, peppers, or sugar and artifiial sweeteners and colours. plus I'm a vegan at the same time! Im only seventeen and have been eating these foods all my life and really don't know what I can eat, apart from fruit and vegetables of course. If anyone has any ideas of foods available that I can eat which are available in ireland, lunch or dinner recipes it woul be reallly appreciated! I really dont want to think about the foods I have to stay off of so any suggestions or as tast meaas pssible it would be great

There are lots of rice products out there, I'm sure you know, rice pasta, rice crackers, rice milk, rice oil and syrup, and of course rice. There's also qunioa and quinoa pasta. It's not an easy diet, especially no sugar. Are you going through NAET treatments?

Can you do other nuts, like almonds? Maybe tahini (sesame paste, similar to peanut butter) or the almond butter. Quinoa is an excellent grain, high protein content. Hopefully you are on a good supplement to get B12? Potatoes. Beans and legumes. Cook up one cup of quinoa (can buy in bulk or sometimes in packages...make sure to rinse it well, put 1 cup of quinoa in 2 cups of water, bring to a simmer, cover and cook 15 min or till water absorbed). In a large bowl, combine 1 can of rinsed black beans, 3 green onions chopped, 2 diced tomatoes, 1 cup of corn, 2 Tbsp olive oil, 2 Tbsp of red wine vinegar, 2 tsp oregano, 1/2 tsp cumin, 1/2 tsp salt, one clove garlic minced, and the juice of one lime. Blend in quinoa and chill for an hour or so. The recipe also calls for a medium green pepper chopped, but you said you couldnt do peppers? Its really yummy
I'd find a good vegan cookbook and just leave out the stuff you cannot have, or think of a substitute.

Also beans and legumes. Canned or dried...you can make endless varieties of soups with beans. Also beans and corn tortillas or rice.

OH, just lurking and saw that Jennifer has posted that beans/legumes may cause problems if you are allergic to soy...hmmmm, well, are you set on being vegan? You may want to incorporate a little fish or chicken in your diet if you can. I'm lacto-ovo vegetarian and for the life of me couldnt do it....I did try using chicken broth instead of veggie in my soup, but couldnt stomach it. But being that you are only 17 and cannot have dairy or soy, you want to make sure your body is getting the nutrients it needs. GL with everything.
