I used DD's baby bedding. Since her toddler bed used her crib matress I just transferred her bedding. Which meant I finally got to use her comforter that came with her crib set. My mom also made an extra comforter so I could change it out while I washed the other. I used all her crib sheets and wasn't too worried about a top sheet, most of the time she kicked her bedding off anyway or wound up in bed with us.
Now that she's in a twin bed, we bought a Princess set that had jersey cotton sheets. And then purchased extra plain cotton sheets to match.

If you're not opposed to gently used, look on Ebay or craigslist.org for Pottery Barn Kids toddler bedding at cheap cheap prices. They always have soft stuff that is super cute, too. Or buy it new But be prepared. Not Target prices.
Sorry can't help much, the girls went straight from crib to single beds at around 3 yrs old. They have pottery barn bedding though and I love it, nice and soft.

We're planning on using their current bedding- so they can use those darn comforters we bought!!
Or we were thinking of letting them choose their own- like you said Disney Princesses or Nemo or something if they are into it- but I wouldn't like the scratchy sheets either so maybe we'll rethink that.

I found a quilt and sham for their twin beds on ebay fairly cheap and brand new. They are SO SOFT! They went from cribs to twin. Hold on....I went to see what brand but they don't have a brand tag.....here's a pic and I'll try to find the brand. I've seen this brand at Home Goods actually. But none of this helps you since you are looking for toddler bedding.....

Land's End has wonderful bedding. Not sure about kids though. But, for adults their flannel sheets rock. They are a bit pricey, but they put alot on clearance. Landsend.com if you don't already know.
