Default homemade baby food questions...

okay so im new at the whole baby food thing and am attempting to make my own, so im hoping some of you do also because i've got some questions.
Okay so I made some sweet potatos last night and put them in the ice cube treys and froze them, and went to take one out and i could not get one out! Isnt that what you are supposed to do though, freeze them and get one or two out to thaw whenever you need it? Or are you supposed to thaw the whole tray?? If that is so then i guess i need to get some smaller trays!
Also, how long can you keep the food in the fridge? Like how many days worth of the sweet potato that i made yesterday could i have just kept in the fridge, if at all?

Hi
I am from Due in November 2004, but I make most of my daughter's baby food. I had the same problem with the icecube trays as well. I just dipped the bottom in a dishpan of hot water for a few seconds and then released all the cubes into a bowl. I usually fed her two cubes and put the rest in single serve portions (2-3 cubes)in snack sized zip locks. Then I would put all the snack size bags into a big zip lock bag and write the date on it and put them back in the freezer. Usually I would pull out all the things I planned to feed her the next day, the night before and put them into the frig to defrost. (For example 2 cubes of peaches, 2 cubes of green beans, and two cubes of yellow squash) If something wasn't quite defrosted by morning I would microwave it for a few seconds and then let it cool back to room temp before I fed her. I usually keep baby food no longer than three days in the frig and never refreeze anything once you have defrosted it.
Now that she is 13 months she is eating more of what we eat and I don't do a lot of freezing, other than leftovers. Occasionally I will make her something and have extra. For example, last night I steamed her a big sweet potato and she ate about 1/3 of it. I put it in the frig and plan to give her another 1/3 at lunch today and then I will probably spoon the rest into a snack size ziplock and freeze it. That way I always have a few things in the freezer for those busy days when I don't have time to steam fresh vegies.
