New Year's Eve
Pumpkin Chocolate Chip Cookies
1 can pumpkin pie mix (the large can)
2 tbsp milk
2 beaten eggs
1 cup vegetable oil
2 cups sugar
2 tbsp vanilla
4 cups flour
4 tsp baking powder
1 tsp salt
2 tsp cinnamon
2 tsp baking soda
1 pack chocolate chips
Mix first six ingredients in one bowl. Mix all dry ingredients (except chocolate chips) in a second bowl. Add the dry ingredients gradually to the wet mix. When fully mixed, add the chocolate chips. Spoon onto cookie sheet, and bake at 375 for 15 minutes. Makes approx. 6 dozen cookies. (I find it's best if you refrigerate the cookie dough overnight - it makes it easier to work with!)
