Squash Casserole

1lb yellow squash sliced
1 egg
1/2 cups bread crumbs
1 small onion-diced
2 slices of bacon
2 1/2 cups of cheddar cheese
salt/pepper


Boil squash with bacon until tender. In large bowl, combine cooked squash
egg, bread crumbs, onion, 2 cups of cheese, salt and pepper. Fold into casserole dish. Top with remaining cheese. Bake at 350 degrees for about 30 minutes.
