
My apologies for this month's newsletter being a tad late. I have been busy the past few weeks with sick kiddos & conferences at school. For my neck of the woods Fall is in full swing. It is one of my favorite seasons (Spring being the other), I love to watch the trees changing from green to the bright reds & oranges associated with Fall. This also means that one of my favorite Holidays is coming, Halloween! I love going to the pumpkin patch with the boys, carving pumpkins, baking pumpkin seeds & of course dressing the boys up in their costumes! I hope that everyone has a very SAFE & Happy HALLOWEEN this year!

I thought I would do 2 recipes this month, 1 for fall & the other for Halloween!
~ Scrumptious Skeletons ~
~ INGREDIENTS ~
Chocolate-frosted cupcakes
Mini marshmallows
Black decorators' gel
White icing
Icing bag fitted with a small round tip
~ PREPARATION ~
1} Start with a batch of chocolate-frosted cupcakes. Top each with a mini marshmallow head, using black decorators' gel to create eyes and a mouth.
2} Use an icing bag fitted with a small round tip to pipe on a stick figure, adding a couple of short horizontal lines for ribs.
~ Autumn Pot Roast ~
~ INGREDIENTS ~
2 1/2 pounds boneless pork loin
1 teaspoon garlic powder
salt and pepper to taste
2 tablespoons olive oil
1/2 cup dry white wine
2 cups cubed butternut squash
1 large onion, sliced
1/2 cup applesauce
1 tablespoon Dijon mustard
1 tablespoon soy sauce
1/2 cup brown sugar
1/2 teaspoon ground cinnamon
~ PREPARATION ~
1} Preheat oven to 350 degrees F (175 degrees C).
2} Season the pork loin with garlic powder, salt, and pepper. Heat olive oil in a large oven-proof skillet or Dutch oven over medium-high heat. Brown the pork loin on all sides in the hot oil, about 10 minutes total. Remove the pork loin from the pan, and set aside. Pour in the white wine, and bring to a simmer, stirring to dissolve the caramelized bits in the pan.
3} Scatter the butternut squash and onion in the skillet and place the browned pork loin on top so they work as a roasting rack. Stir together the applesauce, mustard, soy sauce, sugar, and cinnamon. Pour over the pork loin, then cover the pan with a lid or a double layer of aluminum foil.
4} Bake pork loin in preheated oven until it has reached an internal temperature of 160 degrees F (70 degrees C), about 1 hour. Allow to rest for 10 minutes before serving
