Default (o/t) Dinner

So, my husband did the grocery shopping, and we somehow ended up with about 15 pounds of groudn beef, a bunch of wich he took out today to thaw. Anyways, I am a horribly uncreative cook and i just wonderd if you ladies knew any good recipies involving ground beef? I can only live off tacos, hamburgers, and spaghetti for so long. Lol.

Well chili, turkey salsa (you can use beef), meatballs, pizza. Kids want food. Let me look some more.

How about goulash? Chili? Sloppy joes? Hmm....what about Shepherd's Pie? Tater Tot Casserole? Mmmm....maybe make some meatballs and use them in your spaghetti or make some meatball sandwiches! Goll, I must be hungry or something. I have some yummy recipes for the goulash, Sheperd's Pie, and Tater Tot Casserole if you want them! Or I'm sure you could just google them and find some recipes of your own. Happy cooking! LOL

I make a sorta catch all casserole that includes cooked hamburger (1-2 lbs), cheese, and whatever veges I have on hand or feel like including- usually corn, green beans and sometimes broccoli. I use eggs (3-4 usually) to hold it all together. Pour the mixed ingredients in a baking dish, cover with cheese and foil and bake at 350-375 til all bubbly and hot. Sorry that there are no set amounts to offer but I really do just eyeball it and add more if I feel like it or need a larger casserole. You can't really go wrong with it though no matter how you make it!

We also make a version of something called a Runza (those from the mid west might be familiar with what that is! )...I haven't the time or the patience to make my own bread for it at this point the way my Grandma used to- so I don't- but I use the pillsbury (or store brand) croissant dough that you find with the biscuits. Brown a 1 lb or more hamburger- depending on how many you want to make, add chopped up green cabbage (usually 1/2 head or so) to the hamburger as it browns so the cabbage can cook into it as well. Sometimes I add 1/2- 1 onion as well at this time. When the cabbage is near clear in color and hamburger is browned, unroll the croissant dough and scoop a spoon or so into each and add a sprinkle of cheese before rolling the dough up like a croissant is usually rolled. Bake at the suggested temp on the dough package and that's all there is to that! This is a GREAT little dinner for on the go times as well- we make them at Halloween so that the kids can just carry them along. Mu DH insisted that he hated cabbage before I made them for him the 1st time so my mom and I made a whole cabbage free batch- and guess who LOVED the cabbage ones when he tried them? They really are good!

The ladies gave you some great recipes. Wish I lived closer, I was just thinking I am so sick of chicken and it's all I have in the house. I'd do a swap w/you!! hee hee
