red velvet cake help (melanie?)
Are you still here Melanie? I made my MIL the red velvet cake with the recipe you shared on here. It turned out pretty good, I used buttercream so I could decorate it....but it had a couple of dry spots and my red color was swirled in some spots? I think I didnt really fold the vinegar and baking powder very well, I was nervous to overmix...could that have been the culprit? Have you ever substituted butter for any of the shortening or added extra cocoa powder? I want to make it again and I always love to play around with recipes, so just curious. It was a beautiful color and most of it very moist, I think I overbaked it by a couple min, it was hard to tell when the middle was done. I want to do it again with the coconut frosting for my dad...he loves coconut (so do I).
