What about making a bunch of breakfast burritos? You could make them, wrap them in saran wrap then foil and then freeze them. That way when your boyfriend is ready to heat one up he could take off the foil and leave the saran wrap on it to keep the tortilla soft while it's heating. This would also work with regular burritos as well.
